Ground Turkey And Rice Recipe 260 calories (1 serving)

Ingredients

1 tbsp olive oil
2 oz lean ground turkey
1/4 can beans, drained
1/4 cup tomato sauce
1/8 teaspoon chili powder
1/8 teaspoon cumin
1/8 teaspoon black pepper
1/8 salt
1/4 cup brown rice, cooked according to package
1/8 cup shredded low-fat cheddar cheese

Preparation

Bring rice and water to a boil in a large saucepan. Reduce heat to low, cover, and simmer at the lowest bubble until the water is absorbed and the rice is tender. Remove from the heat and let stand, covered, for 10 minutes.

Meanwhile in a large nonstick skillet, cook ground turkey until cooked through, breaking up the meat as it cooks.
Add beans, salsa, spices, and cooked rice. Allow to simmer until mixture is hot and thickens slightly. Add cheese and allow to melt. Serve.

3/4 cups reduced-sodium chicken broth

3 oz chicken sausage
1/4 cup chopped white onion

1/8 cup chopped green bell pepper

1 clove garlic, minced
1/2 teaspoons chopped fresh thyme leaves

Preparation

Preparation

Continue to cook just until peppers and onion begin to soften and add cooked rice and sausages cook for 1 minute and serve.
